Job Overview As an Assistant Food & Beverage Manager at The Ritz‑Carlton, Chicago, you play a key leadership role in delivering exceptional dining experiences and ensuring operational excellence across outlets, including restaurant, room service, bar, and catering. Key Responsibilities Assist in overall supervision of the department as outlined in the manager’s job description. Complete environmental checklist for dining room. Spot‑check liquor par levels and order daily supplies. Hold pre‑meal meetings and communicate with guests. Follow up on established training steps and uphold service standards. Handle guest comments and complaints to ensure satisfaction. Stay on the floor during peak hours and monitor each guest experience. Observe, teach, and correct staff’s service. Examine food preparation and beverage presentation. Maintain condition of dining room, lobby lounge, minibar, and room service. Assist manager with scheduling, payroll, and weekly/monthly forecasting. Participate in recruitment, management, and discipline of associates as needed. Prepare maintenance requests and follow‑up. Monitor food and liquor requisitions and food waste. Check bar controls, shot glass use, and ensure bottles are not empty daily. Adhere to all liquor liability laws and emergency procedures. Education and Training More than two years of post‑high school education. Valid, unexpired Manager Food Handlers Certification. Valid, unexpired TIPS Basset Certification. Experience One to two years of employment in a related position with this company or other organization(s). Knowledge and Skills Excellent comprehension for assisting with guest and associate matters. Vision required for seating guests, expediting food, cleaning equipment, reading floor plans, charts, and schedules. Excellent oral communication for communicating with guests and associates, issuing instructions, and communicating policies. Excellent written communication for reading and implementing policies and procedures, writing schedules, and reading forecast and SOPs. Knowledge of chemicals/agents for training purposes. Physical Demands Ability to lift, push, pull and carry tables, chairs, trays, plates, and chafing dishes (20–40 lbs.) daily. Bending to pick up dropped items, assist in serving food or getting supplies. No kneeling required. Mobility – 95 % of shift covering all areas of outlets supervising. Continuous standing at hostess station – minimal stationary standing. Climbing stairs – varies by location. No driving required. Work Environment Inside 95 % of shift.
